Prepare time: 45min
Cooking time: 10min
Makes 3- 4 servings
Ingredients:
- 2 ½ cups all-purpose flour
- ½ tsp salt
- 3 ½ tbsp ground flaxseed meal
- 3/4 cup water
- 1 tbsp oil
Directions:

Mix flaxseed meal and water, allow to sit for about 5 minutes.

Mix salt and flour in a big bowl.

Stir flaxseed water and pour it into the flour, add the oil. Mix with hands until dough comes together in a dry ball.

Divide the dough into fourths.

Roll each section onto a floured surface as thin as possible.

Use a knife to cut the noodles into long strips. I usually cut them around 9mm or ⅜ inch. It can be wider or narrower if you like.

Let the noodles dry on a clean towel or a piece of parchment paper, around 15min.
Put noodles in a pot of boiling water for around 7-10m.
Notes:
1. If you like to save noodles for future use, you can put them in an air-tight container. Refrigerate up to 3 days or freeze for a month.

Consider serving homemade noodles with Peanut Vegetable Seaweed Soup.
